One for me, one for you.....

A couple of years ago one of my friends told me that I needed to find a DownEast store while I was visiting in Utah. While in college, I had gone to DownEast Outfitters but was unaware of their new(er) clothing line. I found the shop and was an immediate fan. Great basics, fun skirts and dresses, and all super affordable as well as modest. I hit the jackpot.
I recently opened up their fall catalog and fell in love. Every single item was calling my name. Seriously.
So what does this have to do with 30days? Well the people at DownEast Basics were kind enough to send me two items to write about. I ended up with the Wonderful World dress and the Curtsy Coat. Adorable. I tried to do a photoshoot with the products. But it resulted in me knowing that a)I will never be a model and b) that Josh will never be a photographer (thank you Joshie for trying to help).

My favorite cookie recipe is the one on the back of a back of ghiridelli chocolate chips, with a few adjustments.

I do 1/2 & 1/2 butter & crisco instead of all butter, makes them flakeyer. And I add 1/2-1 cup extra flour, makes them thicker and yummyier.

Best cookies ever!

Chewy White Chocolate Chip Chocolate Cookies!
1 3/4 cups flour
1 1/4 cups cocoa powder
1 cup white sugar
3/4 cup brown sugar
2 tsps. baking soda
1 cup butter
2 eggs
1 tsp. vanilla
1/4 tsp. salt
2 cups white chocolate chips


1. Preheat oven to 350 degrees and grease cookie sheet.

2. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Add the salt and vanilla.

3. In another bowl, combine the flour, cocoa and baking soda and gradually add to the creamed mixture, it will be thick but its right. Fold in chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheet. (I use a cookie dropper)

4. Bake for 8 to 10 minutes until fluffy but still soft (I do 9). Allow cookies to cool on baking sheet for 1-2 minutes (so they harden a little) move to a wire rack to cool completely.

My favorite all-time cookies. The black pepper is a nice addition:

MEXICAN DOUBLE CHOCOLATE CHOCOLATE CHIP COOKIES
1 cup all-purpose flour
1/2 cup unsweetened Dutch-process cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1/8 teaspoon finely ground black pepper
1/4 pound coarsely chopped good-quality dark chocolate
1/2 cup (1 stick) unsalted butter
1 1/2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract

Preheat oven to 325 F. Whisk together the flour, cocoa powder, cinnamon, baking soda, salt and black pepper. Set aside. In a small heatproof bowl set over a small saucepan of simmering water, melt the coarsely chopped chocolate with the butter. Let cool slightly. In the bowl of an electric mixer fitted with a paddle attachment, combine the melted chocolate mixture with the sugar, eggs and vanilla. Mix on medium speed until combined. Reduce speed to low and gradually add the flour mixture. Fold in the chocolate chips. Line a 17-by-12-inch cookie sheet with parchment paper. Using a 1 1/2-inch ice-cream scoop, drop scoops of the cookie dough onto the parchment paper, spacing 2 inches apart. Bake the cookies for about 15 minutes, until they look flat and the surfaces crack (cookies should still be soft in texture). Let the cookies cool on the parchment on wire cooling racks. Store at room temperature for up to 3 days. Makes about 3 dozen.

My favorite cookie recipe is Magic cookie Bars

1 package (bag not the whole box)of graham crackers (completely crushed)
1 stick of butter, melted
1 C. choc chips
1 C. butterscotch chips
1 C. shredded coconut
1 Can sweetened condensed milk
pecans (optional)

Preheat oven to 350. combine melted butter and crushed graham crackers. Press into the bottom of a 9x13 glass pan (crust). Sprinkle with both types of chips evenly. Drizzle half of the sweetened condensed milk over the chips. Sprinkle with the coconut, and pecans (if using), then drizzle the rest of the sweetened condensed milk (evenly) over it all. Bake at 350 for 30 minutes or until just golden on top. Let cool for at least 15 minutes before cutting...yum

One of my Fav. Cookie recipes is:

Lime Meltaways

Ingredients

Makes about 3 dozen

* 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
* 1 cup confectioners' sugar
* Finely grated zest of 2 limes
* 2 tablespoons fresh lime juice
* 1 tablespoon pure vanilla extract
* 1 3/4 cups plus 2 tablespoons all-purpose flour
* 2 tablespoons cornstarch
* 1/4 teaspoon coarse salt

Directions

1. Put butter and 1/3 cup confectioners' sugar in the bowl of an electric mixer fitted with the whisk attachment, and mix on medium speed until pale and fluffy. Add lime zest and juice and vanilla, and mix until fluffy.
2. Whisk together flour, cornstarch, and salt in a bowl. Add to butter mixture, and mix on low speed until just combined.
3. Divide dough in half. Place each half on an 8-by-12-inch sheet of parchment paper. Roll in parchment to form a log 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log. Refrigerate logs until cold and firm, at least 1 hour.
4. Preheat oven to 350 degrees. Remove parchment from logs; cut into 1/4-inch-thick rounds. Space rounds 1 inch apart on baking sheets lined with parchment paper. Bake cookies until barely golden, about 13 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool slightly, 8 to 10 minutes. While still warm, toss cookies with remaining 2/3 cup sugar in a resealable plastic bag. Cookies can be stored in airtight containers at room temperature up to 2 weeks.

My favorite cookie recipe. I know it is just chocolate chip but I would eat the whole batch of these if I let myself.

Soft Chocolate Chip Cookies
1 cup shortening
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 tsp vanilla
2 1/2 cup flour
1 tsp salt
1 tsp baking soda
1 pkg semi-sweet chocolate chips

1. Mix fist 5 ingredients, then add rest
2. Bake 350 for 7-8 minutes
****The key is to remove them from the oven just before or at the first hint of browning. They will harden as they cool, but stay soft. Don't overcook*******

Here is my favorite cookie recipe, its a betty crocker recipe and they are called easy monster cookies!

1 pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix
1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
1 1/2 cups quick-cooking oats
1 cup butter or margarine, softened
3 eggs
2 cups candy-coated milk chocolate candies

About Concordance™

1. Heat oven to 375°F. In large bowl, stir all ingredients except candies until soft dough forms. Stir in candies.

3. Bake 12 to 13 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheets. Cool completely. Store in covered container at room temperature.

PEANUT BUTTER COOKIES WITH HERSHEY
KISSES

1/2 c. butter
1/2 c. peanut butter (creamy)
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 1/4 c. flour
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Preheat oven to 375 degrees. Mix together first 5 ingredients; then add remaining flour and mix until you form a sticky dough. Roll into small balls and place onto a greased cookie sheet. Bake 8-10 minutes or until just golden brown. Place unwrapped Hershey kiss in center of each cookie, while they are still hot. Makes approximately 48 cookies.

my FAVORITE is the Tollhouse recipe found on the back of the chocolate chip bag... but I do a couple things different...

*I use at least 3 cups of flour
*I beat each step longer than normal and
*I beat in each egg individually

Favorite cookie...the classic chocolate chip with nuts and occasionally raisins:

1 1/2 sticks butter (12 tablespoons)
1 cup light brown sugar, firmly packed
1/2 cup white granulated sugar
2 eggs, lightly beaten
2 1/4 cups sifted flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. pure vanilla extract
1 cup nuts, chopped
1/2 cup golden raisins, soaked in hot water (optional)
1 cup semi-sweet morsels

I love love love this store. In fact, we have one close by and I had an aunt who told me as she was in the store that it just had my name stamped all over it...

I love all of the skirts, especially the Turning Colors and Summary Skirt, and the Sophomore top. I also wear the wonder tees all of the time. They are great for layering.

So perfect for fall.

Not your typical cookie.. but we call them turtle cookies!
Ingredients:
Package of rolos
Bag of pretzels
Package of pecans

Preheat your oven to 350

1. Upwrap rolos. Place pretzels on baking sheet. Top with one rolo.

2. Bake in oven for 3-5 minutes, until the rolo is softened.

3. Remove from oven, place on cooling rack and immediately squish the chocolate with a nut.

So yummy, so easy!

My favorite cookie recipe is chocolate chip:

6 c flour
1 1/2 cu sugar
1 1/2 c brown sugar
2 c shortening
4 eggs
2 tsp salt
3 tsp baking soda
6 T water
2 c chocolate chips
bake at 375 10-12 minutes. YUM!

Easy Pumpkin Cookies

1 Spice Cake Mix
1 Can Pumpkin
1/2 bag of choc chips

Mix. Plop on cookie sheet. Cook for 10-12 min. Eat. Enjoy!

S'More Cookies are a current fave.

S’more cookies
1 c. butter, softened
1 ½ c. sugar
2 eggs
2 tsp. vanilla
2 2/3 c. flour
1 ½ c. graham cracker crumbs
2 tsp. baking powder
½ tsp. salt
Bag of chocolate chips
½ bag of miniature marshmallows
Heat oven to 350. Grease a 9X13 baking dish. Beat butter and sugar until well blended. Add egg and vanilla. Stir together flour, graham crackers, baking powder and salt. Add to butter mixture, beating until blended. Press half of dough into prepared pan. Bake 15 minutes. Arrange chocolate over baked layer. Sprinkle with marshmallows and scatter bits of remaining cookie dough over marshmallows to form the top layer. Bake 10-15 minutes, or just until lightly browned.
